Banana Walnut Muffins

Ingredients
3 ripe bananas, mashed (about 1 cup)½ cup honey1 ½ tsp. vanilla extract1 cup low fat plain yogurt2 tbsp. vegetable oil1 egg½ tsp. salt2 tsp. baking soda1 cup whole wheat flour½ cup wheat bran or high fibre cereal¼ cup ground flax seed¼ cup soy flourPinch nutmeg12 walnut halves (to top)
Directions
Mix wet ingredients together, combine with dry until just blended. Spray 12 muffin cups with cooking spray, then fill with batter and bake for approximately 25 min. at 350F or until lightly brown and firm on the top. If there is a type of flour on the list you don’t have or have never heard of, substitute more whole wheat flour.
