1 small potato, diced1 tablespoon low fat butter1/4 cup diced onions1/4 cup chopped pepper, bell3 egg whites1 slice fat free american cheesesalt and pepper to taste
Melt butter in pan on low-mid heat. Add potatoes, onions, and pepper. Cover with lid and cook for about 10 minutes, or until potatoes and onions are soft, stirring occasionally. Add egg and stir. Add cheese. Turn off heat and cover with lid, the cheese will melt on it's own. Stir again before serving. Makes a very filling breakfast, easy on the calories and fat.
