1 cup quinoa, rinsed with cold water1 1/4 cups of vegetable broth8 oz sliced mushrooms1 cup frozen peasTobasco (just a dash for heat)3 tbsp poultry seasoningPam
Heat a large skillet over medium-high heat. Spray with Pam and add the musrooms. Cook until they've started to release their water. Add the tofu and saute' until it starts to brown. Season with Tobasco and poultry seasoning. Saute' 2-3 minutes more. Add the quinoa, peas and broth. Bring to a boil and then cover and simmer for 12 minutes. Take off the heat and let sit for 5 minutes. Fluff with fork and spoon into large bowls. Top with Vegan Parmesan cheeze and dig in! Makes 4 servings.
