Applesauce Muffins

1 cup all purpose flour1 cup whole wheat flour3/4 cup sugar2 tsp. baking powder1 tsp. ground cinnamon1/4 tsp. salt1 large egg, slightly beaten1 cup unsweetened applesauce1/2 cup Smart Balance Butter Blend Omega-3, melted1 T. flaxseed
1. Preheat oven to 375 degrees. Grease or line 12 cup muffin pan.
2. Combine both flours, sugar, baking powder, cinnamon and salt in a medium bowl. Whisk to blend.
3. Add the egg, applesauce and melted butter. Spoon into the prepared pan. Bake until a toothpick inserted in the center comes out clean, 18 to 20 minutes. Cool for 10 minutes and then remove muffins from pan to cool completely. Makes 12 servings.
