french bread, goat cheese, eggplant, zucchini, red onion, tomato, avocado, olive oil, salt, pepper, roasted red peppers
Makes 4 large servings.
Slice eggplant and zucchini crosswise into thick slices. Cut red onion into large rings. Drizzle olive oil on eggplant, zucchini and onion and add salt and pepper. Grill on each side for about 4 minutes. Cut loaft of bread in half lengthwise and spread goat cheese on bottom half of bread.
Layer grilled eggplant, zucchini, onion on top of the bread with the cheese on it. Add roasted red peppers, tomato, and avocado slices. Add some more salt and pepper to taste. Top with remaining half of bread and cut sandwich into 4 sections.
