Seitan Chorizo, Brown Rice and Vegetables

Ingredients
1 oz mushrooms1 oz green and red peppers mized (fresh or frozen)1/2 oz cubanelle peppers (fresh)1/2 oz green onions2 large artichokes (fresh or canned in water)1 tsp EVOO1.5 oz Upton's Naturals Seitan Chorizo1/2 cup cooked long grain brown rice
Directions
Cook brown rice as directed but substitue liquid by using 1 cup water, 1 cup vegetable broth In separate pan saute chopped or sliced vegetables in oil for 3 to minutes. Add setian chorizo to vegetables and cook for one minute. Once rice is done, add 1/2 cup of rice to vegetable and chorizo mixture to rice. If you want a lower calorie dish, just mix 1/4 cup of rice to vegetable mixture.
