Linda's Chicken Taco Bake

Ingredients
1 1/2 c Minute rice1 can pinto beans1 qt canned tomatoes1/2 cooked chicken breast1 1/2 c shredded cheddar cheese
Directions
This is a layered casserole.
Layer 1 - cooked white rice
Layer 2 - pinto beans
Layer 3 - Half the canned tomatoes
Layer 4 - chicken breast, shredded
Layer 5 - remainder of tomatoes
Layer 6 - cheese (add in last 10 minutes of baking)

Sprinkle the chicken layer with taco seasonings before topping with tomatoes. Bake at 350 degrees F for 20 minutes. Add shredded cheese and return to oven for 10 minutes or until cheese melts. Serves 6.

    Really delicious - and easy! Used brown rice and black beans, 2 pcs chicken breast, petite diced tomatoes w/ jalepenos to give it a little kick, and low-fat cheese. I'd say it really only makes 4 servings though. I will definitely be making this again! - 6/30/09
