Asparagus-Shrimp Salad

2 1/2 ounces fresh asparagus spears4 ounces shrimp cooked medium, thawed if frozen and drained.3/4 teaspoon lemon juice1 tablespoon Kraft Fat Free salad dressing 1 tablespoon green onions thinly sliced1/4 tomato, cut into wedges1 1/2 teaspoons parsley chopped (Optional)Lemon WedgesLettuce Leaf
1. Par-boil asparagus for 2 minutes until crisp tender. Remove from water and place in ice water to stop cooking. Place on paper towel to drain.
2. Meanwhile, in a medium bowl, sprinkle shrimp with lemon juice. Let stand 2 minutes; drain well.
Add the salad dressing and green onions. Chill for 20 minutes.
3. To assemble the salad, line a bowl with lettuce. Arrange the asparagus in a fan shape. Spoon shrimp mixture over base of asparagus. Garnish with tomato wedges, lemon and parsley.
