Amazing Enchiladas

2 Whole Chicken Breasts (boned and skinned)1/2 Cup of Sliced Japaleno Peppers1 (16 oz) can of refried beans2 (10 oz) cans of Enchilada Sauce1 (24 oz) jar of chunky salsa1 (8 oz) packages of taco style cheese1 package of flour tortillas
Cook chicken in chicken broth or water until done.
Cool chicken to touch, shred chicken, put in a large bowl.
Chop japaleno peppers with food chopper or food processor.
Add to chicken, the refried beans, japaleno peppers, 1 cup of cheese and 1 cup of salsa. Mix well.
Warm tortilla shells until pliable.
Take one can of enchilada sauce and pour into a 13x9 baking dish (I spray mine with pam)
Scoop chicken mixture onto tortilla roll up and place seam side down in a baking dish. Continue until all tortillas are filled.
Top with remaining can of enchilada sauce and salsa cover with aluminum foil. Bake covered for 40-45 minutes. Top with remaining cheese and bake until cheese is melted.
Serve with sour cream if you like (this is not in the totals)
