Ingredients
1 tablespoon olive oil (sub for butter)1/2 cup chopped onions8 ounces of sliced mushrooms1 tsp tyme2 cooked chicken breasts1/2 cup red wine1 cup reduced-sodium chicken broth1 1/2 tablespoons cornstarch2 teaspons Worcedstershire Saucesal and freshly ground pepper2 tablespoons freshley chopped chives
Directions
Add olive oil or butter to large skillet over medium heat. Add onion and cook 3 minutes until soft. Add mushrooms and cook 3 minutes, until mushrooms soften. Add thyme and cook 1 minute, until fragrant. Stir in chicken. Add wine and simmer 1 minute. In a small bowl, whisk together broth, cornstarch and Worcestershire sauce. Add mixture to pan and bring to a simmer. Simmer 2 minutes, until mixture thickens. Season to taste with salt and black pepper. Transfer to a serving platter and top with chives.

    I just fixed this for dinner tonight, without mushrooms, so fixed with minor tweeking. Added 1½ tsp of thyme and added an extra 1 tsp of corn starch for thicker sauce. Recipe is delicious. Served with salad. Danke for sharing. - 2/9/10
