Hickory Chicken

Ingredients
4 Boneless skinless chicken breast2 cups sliced (raw) mushrooms4 oz shredded monterrey jack cheese1/2 cup bbq sauce1 tbsp butter or margerine
Directions
Sautee mushrooms in skillet with no stick cooking spray. Get out the grill, and grill your chicken breasts. While they are grilling, use your bbq sauce to baste them on each side. When chicken is done, pour any unused bbq sauce over them.( do not do this if you got any raw chicken juice mixed in with your sauce from basting.) Lay mushrooms on top, then sprinkle 1 oz cheese on each breast. If neede, mirowave 30-45 seconds to melt cheese.

    Very similar to Saltgrass Restaurant's Hickory Chicken!
    I pound breasts evenly flat, quickly cook/brown in a cast iron skillet, mix a little salsa into bbq sauce, coat breasts, top with sauteed mushrooms, top with pepper jack cheese, cover skillet for a few minutes 'til cheese melts. Ahhhh! - 3/18/11

    I did not realize I had to grill the chicken so I sautee'd it in BBQ sauce- not a large amount but puddles. Then I placed the chicken in a corelle dish that I basted with BBQ Sauce and topped with mushrooms and Cheese then baked at 350 for ten minutes. It was VERY good!! - 12/15/10
