Creamy Potato Soup

Ingredients
3 Tbsp butter1 onion, diced4 large potatoes, cubed3 Tbsp parsley, chopped3 stalks celery and leaves, chopped2 large carrots, chopped or grated2 tsp salt1/4 tsp paprika1 1/2 cups boiling waterWhite SauceWhite Sauce:4 cups milk2 Tbsp flour4 Tbsp butter2 chicken bouillon cubes1 tsp salt1/4 pepper
Directions
1. Saute onion in butter until tender. Add remaining ingredients except white sauce and cook until vegetables are tender.
2. Add white sauce and stir until blended.

White Sauce:
1. Mix 1/2 cup milk with flour. Heat remaining milk to boiling. Add flour mixture and stir constantly until thickened. Add remaining ingredients and stir until bouillon cubes are dissolved.
