Ingredients
Olive Oil, 1 tbspOnions, raw, 1 medium, choppedGarlic, 5 clove, mincedRed Ripe Tomatoes, 1 medium, choppedPeppers, sweet, red, raw, chopped, .5 cup Beans, red kidney or red beans, 1 cupTomato Paste, 1 can (6 oz) Chicken Broth, 1 cup (8 fl oz) (Substitute Vegetable Broth if you want to make this a vegetarian meal)Salt, 1 tsp Pepper, black, .5 tsp
Directions
Heat Olive Oil in a skillet, add onions, garlic and saute a few minutes. Next, add the red peppers, tomato and saute until tender. Add beans and the rest of the ingredients. Simmer for about 15 minutes until the sauce thickens. You can add more seasoning as desired; Adobo, cilantro...
