Brown Sugar Icebox Cookies

Ingredients
1/2 cup butter, softened1 cup dark brown sugar, packed1 egg1/2 tsp vanilla extract1 3/4 cup multigrain flour1/4 tsp salt1/2 tsp baking powder
Directions
Cream butter. Add sugar. Beat until pale. Add egg. Beat well. Add vanilla, beat to combine.


Mix dry ingredients together and add to creamed mixture 1/2 at a time. mix to combine.


Form into a rectangular log about 10 inches long. Wrap in wax paper and place in freezer for 1 hour.

Slice into 1/4 inch slices and bake on parchment lined baking sheet in 350 degree oven for about 8-10 minutes until just slightly golden at edges.

Makes 40 cookies.

    I've been doing this recipe for years and i make 75 cookies with the same amount. The only difference is that i add pecans. The problem is that they are too good, can't have juste one. - 11/29/09
