Spanish Rice with Chicken

Ingredients
1 lb. Boneless, skinless Chicken Breast (diced)1 can Kidney Beans1 can Diced Tomato1 cup sliced zuchinni1 cup sliced yellow squash1/4 cup diced onion1/4 cup diced green peppers2 Tbs. Chili Powder1 tsp. red pepper2 tsp. black pepper1 cup salsa2 Tbs. Olive Oil1 cup rice1 4 oz. can diced green chiles
Directions
Cook or steam rice. While it is cooking...
Cook green peppers, onions, green chile and chicken in Olive oil. When chicken is cooked add zucchini, squash, beans, tomatoes, salsa, and spices. Simmer for 10 minutes. Stir in rice. If it seems dry you can add more salsa. Add more red pepper or use hot salsa if you life it spicy.

Makes 10 one cup servings.
