1/2 can of diced tomatoes & green chilies, 1 cup sliced fresh mushrooms, 2 slices of turkey bacon(cooked) pieces, chopped chives (to taste) 3 large egg whites+ 1/2 a yolk, splash fat-free milk (beat)
spray non-stick pan with cooking spray, heat pan till hot. cook mushrooms till half done, add tomatoes and green chiles, continue to cook and stir about three minutes, stir in cooked bacon, add chives. Set aside. Preheat large skillet, sprayed with cooking spray, until hot. Pour in egg mixture, allow to cook until set, occasionaly lifting and turning pan and allowing unset egg to, run around and under the already set egg. Loosen edge of set egg with spatula/turner. Ideally, you flip it, otherwise, continue to loosen, and turn over in pan. Lower temp. Add precooked veggie/bacon mix in the center of egg, then gently fold over. Remove from heat, then pan, and serve
