3 Tbsp. extra virgin olive oil2 medium carrots, chopped3 cups chopped celery1/2 cup chopped onion5 cloves garlic, minced2- 14 oz. cans fire roasted tomatoes2 cups dry red wine2 cups water2 bay leaves1 filet of cod15 small scallops12 large shrimp (head on)12 clams, cleaned and in shellCayanne pepper to tasteSalt to taste
Heat the olive oil in a large pot over medium heat. Add the onion, celery and carrot. Cook, stirring often, until softened.
Add the red wine, water, bay leaf and tomatoes. Reduce heat, cover and simmer for 20 minutes. Add the remaining ingredients and cook for an additional 15-20 minutes or until done.
Serve with crusty bread.
