No Bake Mexican Casserole

Ingredients
1 packet of taco seasoning2 cups hot water1 box of macaroni & cheese (do not make as directed)1 cup salsa1 can whole kernal corn, drained1 pound lean ground turkey breast1/2 cup fat free sour cream
Directions
Cook ground turkey until brown

In a 2 quart microwavable bowl, mix taco seasoning, hot water, mac and cheese, salsa, corn and ground turkey and the dry cheese mixture

Cover and cook in microwave for 8 min and than mix

cover and continue cooking for 6 min

stir in sour cream, cover and let sit for 2-3 min before serving

This dish serves 6

    I skipped the taco seasoning and added black beans--the salsa gives it enough of a kick to not need the seasoning (hence the sodium)--it was delicious! The only problem is not eating more than one serving! - 6/2/09

    I only gave it a 3 because like a few other people the pastta just didnt cook correctly. first it was undercooked.. and now its kind of cooked and sticky and weird. not pleasant. However I think if I cook the macoroni seperatley on the stove and then mix at the end it has potential to be awesome - 12/17/09

    My family really enjoyed this dish. It was super easy - great for a quick dinner. I added black beans and only used 1/2 of the taco mix due to the high sodium count. Next time, I will add onions and rotel and leave the taco mix out all together. - 6/28/09

    Even with added taco seasoning (I make mine homemade and use no salt) and hot sauce this had no taste except for processed cheese. The macaroni was also so overdone that it just mushed together. Won't make again - 6/17/09

    This was excellent. The changes I made was that I used heated frozen corn for the canned corn, used low-fat sour cream (Daisy Brand is best I think!), used a can of Ro*Tel Mild tomatoes (pureed) for salsa, and used Annie's Whole Wheat Pasta & Alfredo Macaroni & Cheese. - 6/17/09

    Nutrition info will definitely be swayed by what brands of ingredients you use. When I calculated it out, it came out to 338 calories, but less sodium and fat than this recipe. Overall, it turned out pretty yummy. Eat light before dinner the day you make this. - 6/6/09

    O... M... G...! This was my first Spark recipe and it totally rocked my world. I didn't have any ground turkey so used ground beef and doubled the ff sour cream because I'm always low on diary/calcium. Will def make again! - 9/8/10

    Great recipe! I did make a couple of substitutions. I used kidney beans in place of corn, and queso dip in place of salsa. This dish was so easy to make and very filling. I will definitely make this again. - 11/23/09

    This was FANTASTIC!!!!! I asked my husband to make it and he wasn't too excited about it. He ended up LOVING it!!!!!!     Easy to make in a large skillet. I browned 99% lean ground chuck (grind it myself) in olive oil, then added the rest of the ingredients (will need extra water for the macaroni), covered and cooked till the macaroni was done. Next time I will add a can of chili beans and use my own spices. - 6/18/09
