L.R. Millet pumpkin muffins with flax and oat bran

Ingredients
1-1/2 millet flour1/2 cup ground flax seed1 cups oat bran1 cup sugar2 tsp. baking soda2 tsp. baking powder1 tsp. cinnamon1 tsp. salt4 eggs2 cups cooked pumpkin2 T. oil 1-1/2 cups buttermilk1 cup Hershey's special dark chocolate chips
Directions
Preheat oven to 400. Spray 24 muffin cups with non-stick spray. In a large bowl, combine dry ingredients. In another bowl, whisk together wet ingredients. Stir wet into dry. Stir in chocolate chips. Divide among prepared muffin cups. Bake for about 20 minutes or until done. Makes 24 muffins.

    We just started using whole grains and this was a nice option for using millet. I did substitute Oat flour for the oat bran because I havent' been able to find oat bran at the store. Very good and moist. Even my picky son liked them! I got 28 muffins w/ this recipe. - 3/10/12

    substituted gluten free all purpose flour for the millet flour because I did not have any. These still turned out fabulous. so tasty! - 4/9/11

    very moist and surprisingly light, it was hard to stop at just two! delicious. I have a vita mix so I just blended millet,oat groats and flax seed into a flour. YUMMY - 2/5/10
