Vegetarian Bean Chili

1 tablespoon olive oil8 large garlic cloves, chopped1 onion, diced2 bell peppers (any color)3 14 1/2-ounce cans diced tomatoes2 15-ounce can black beans, well drained1 15-ounce can garbanzo beans (chick-peas), well drained1 15-ounce can kidney beans, well drained (any bean you want)3 tablespoons chili powder1 tablespoon ground cumin1 cup of dry red winetabasco to tastea few splashes of red wine vinegar
Heat oil in heavy large saucepan over medium heat. Add garlic, onions and peppers and sauté until fragrant, about 1 minute. Add next 7 ingredients and bring to simmer. Cover, reduce heat to low and simmer until flavors are blended about 30 minutes. Season to taste with salt, pepper and hot sauce. Add vinegar to taste.
