Pineapple Chicken Kabobs

Ingredients
Marinade:1 orange, zested then juiced1 lemon, zested then juiced4 garlic cloves, minced2 TBS. fresh tarragon leaves, chopped1/4 C soy sauce1/4 C canola oil1/2 tsp salt1/2 tsp Black pepper1-1.5 LBS boneless, skinless chicken breast, chopped into 1 inch pieces2 C fresh pineapple, cubed into big pieces1 red onion, choped into big piecesMetal skewers
Directions
Combine all of the ingredients for the mrinade into a glass baking dish. Add the chopped chicken. Cover and marinate int e fridge for 2-4 hours.

When you are ready to grill, assemble the kabobs in any order you like..chicken, red onion and pineapple. This recipe should make 4-6 kabobs, depending on how much you stuff them!

Grill until the chicken is cooked through. Approx. 5-7 minutes.

I serve this with brown rice and steamed broccoli..
It reminds me of the Outback chicken griller.
