Smokey Pork Stroganoff with Dill

1 tsp canola oil12 oz pork loin3 garlic cloves1 cup onions, chopped1 cup red bell peppers, chopped8 oz fresh mushrooms, sliced1 tsp ground mustard1/2 tbsp smoked paprika (or sweet Hungarian)1 tsp cornstarch2 tbsp fresh dill weed1/2 tbsp spicy brown mustard1/4 cup Fat Free Half & Half1/4 cup Breakstone Reduced Fat Sour CreamSalt and Pepper (optional)
1) Heat oil in large pan. Add pork and cook til brown.
2) Add garlic, onion, and peppers to pan and cook until tender. Add mushrooms and cook for a few minutes more.
3) Whisk the ground mustard, paprika, cornstarch, dill, spicy brown mustard and half and half into the sour cream.
4) Add sour cream mixture to pan. Turn heat up to medium-high stirring constantly until mixture thickens. Reduce to low and let simmer for 5 minutes. Salt and pepper to taste, if desired.
Serve with whole wheat egg noodles or brown rice.
