Simple white cake or cupcakes

Ingredients
Granulated Sugar, 1 cup Margarine like spread, approximately 40% fat, .5 cup Egg white, 2 largeVanilla Extract, 2 tsp Flour, white, 1.5 cup Baking Powder, 1.75 tspMilk, nonfat, .5 cup
Directions
Pre-heat oven to 350. Grease and flour a cake pan or line muffin tin with papers. In a medium bowl, cream together the sugar and the margarine, Beat in the egg whites one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Stir in milk until batter is smooth. Pour into pan or cupcake liners.
Bake for 30 to 40 minutes for a cake. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.
Makes 24 cupcakes.

    I agree with all the other comments. I used Splenda blend for baking, and it's 65 calories per cupcake. They are quite small, but if you just need a little something sweet, this will work! - 4/10/09

    the way I made it it was kind of dense as a cake, but still good. I served it with sliced banana's and apples. Next time I'm using a canned fruit with juices so it isn't so dry. - 1/31/09

    I made this for the fourth of July and it tasted good, kinda like a sugar cookie, but the texture was super heavy and thick and it didn't really rise, it was very moist though. I had to triple the recipe to fill a 9x11 pan. I will make it again, but probably as a fruit pizza base or cup cakes. - 7/7/08

    Very easy. I ran out of Vanilla, so I added 1 tsp of Honey in place of one tsp of vanilla. I baked them for only about 10-12 mins and they were a little dry too - but still very tasty. We make about 10 cupcakes. - 6/29/08
