Shredded Wheat Oatmeal Cookies

Ingredients
2/3 cup Butter2/3 cup Brown Sugar1/4 cup White Sugar1 tsp Ground Cinnamon1/4 tsp Ground Allspice1/2 tsp Baking Soda1 cup Unsweetened Applesauce1 1/2 cups White Flour2 cups Quick Oats3 cups Shredded Wheat Cereal1 Whole Egg1 Egg Yolk1 tsp Vanilla
Directions
Makes 48 cookies (size 50 scoop)

Heat oven to 375 degrees F.

In a large bowl, beat egg and egg yolk. Add the sugars, vanilla and applesauce. Let set at least 10 minutes to allow the sugars to begin to dissolve.

Over medium-high heat, brown half of the butter, stirring constantly. Remove from heat and let set about a minute. Add rest of butter and stir until melted. Let cool briefly then add to the sugar mixture.

Stir in spices and soda then stir in the flour. Add the oats and shredded wheat.

Use size 50 cookie scoop. Roll into balls and flatten in palm. Place on greased cookie sheet. Bake 12 minutes at 375 degrees.

    Good cookie. I used fat free greek yogurt instead of applesauce as that's what I had on hand. - 7/29/09
