Turkey sausage Hash

Ingredients
1 lb potato, pre-baked2 med. onions, chopped4 oz. fresh mushrooms10 oz. turkey sausage, chopped1/4 fresh parsley or a couple TBSP dried parsley 1 plum tomato, sliced thin.
Directions
Bake potatoes the night before. Leave to cool. In the morning, peel and dice potatoes =1lb.
Chop onions fine.
Clean & quarter mushrooms.
Brown turkey sausage in pan for couple mins. on med high heat. Remove turkey from pan onto separate plate.
Spray pan with oil. Saute onions for 2 mins.
Spray pan with oil again. Add mushrooms and cook on med heat for 3 mins more.
Spray pan with oil & add potatoes and cook 9 mins. more turning to brown.
Finally add turkey and mix. Put sliced tomato on top.
