Meatloaf with hidden Veg for pickey children

Ingredients
1 Lb. Ground Turkey1 Stalk Celery1/2 Red Pepper1/2 Orange Pepper4 oz Portabella Mushroom1/4 Cup BBQ Sauce1/2 Medium onion1 large egg1 cup breadcrumbs
Directions
Puree celery, rad and orange peppers, mushrooms, onion, and BBQ sauce (note: Puree is optional, we did it to make all the veg in the recipe look like barbecue sauce).

Combine puree, ground turkey, egg, and bread crumbs into a bowl and mix together.

Add the resulting mixture to a loaf pan.

Bake in oven at 400 degrees for 35 minutes.

    I like to hide carrots in meatloaf. It cuts down on the meat and adds healthy veggies! If you shred them you can't even tell that they are there. - 6/1/09
