Rhubarb Pie

Ingredients
*Rhubarb, 6 cup, diced into 1/2 inch piecesGranulated Sugar, .75 cupkraft minute tapioca, 12 tsp Cinnamon, ground, 1 tbsp Nutmeg, ground, 1 tbsp Pie crust, frozen, ready-to-bake, 1 crust, single 9"
Directions
Preheat oven to 375*
Mix all ingredients. IF using frozen rhubarb, let stand for 45 minutes after mixing.
Pour into pie shell...which should be in a pie pan at this point
Cover crust with aluminum foil
Bake for 30 minutes with aluminum foil on, then remove and bake for 30 with it off.

    I think this has too much cinnamon and nutmeg. I could not taste the rhubarb. Also, the tapioca didn't help to thicken the filling like it should have. - 6/21/11
