Cathy's Creamed Spinach (The Light Version)

Ingredients
1 tbsp. Extra Light Olive Oil1 Clove fresh garlic, minced.25 Cup chopped raw onion2 pkgs frozen spinach (10 oz. ea.)1 Cup Fat Free Half & Half100 gms Fat Free Cream Cheese1 Dash Salt (to taste)1 Dash Pepper.5 tsp Tabasco Sauce4 oz. Green Chiles (mild, chopped)
Directions
Brown onions and garlic in Olive Oil until onions are transparent. Add frozen spinach and cook covered over very low heat to thaw and cook slightly. When completely thawed, add half & half, cream cheese, salt, pepper & green chiles. Cook over medium low heat until cheese is completely melted. Add Tabasco Sauce & enjoy.

    This was seriously good. Didn't have tobasco, but it was still great. I could eat it every day. I was a bit decadent and crumbled some french's fried onions on the top - yum!! - 3/27/07
