Apple Sauce Elk Meat Loaf

1 cup apple sauce (divided)2 tbsp chopped onion1 tsp salt1 Tbsp + 1 tsp prepared mustard1 lb ground elk meat1 cup soft bread crumbs1 tsp pepper1 tbsp finely chopped celery1 egg beaten1 cup brown sugar1 tsp vinegar
Combine bread crumbs and 1/2 cup apple sauce. Add onion, salt, pepper, celery, 1 Tbsp of mustard, egg and ground elk meat. Blend thoroughly. Shape into round in a 9" x 9" x 2" pie pan. With a spoon, make an impression in the top of the loaf.
Combine the second 1/2 cup of apple sauce, brown sugar, vinegar and tsp. of mustard. Pour into the impression in the meatloaf. Bake at 350 degrees F for one hour. Serves 5 or 6.
