Chicken Fajita Salad

Yogurt, plain, low fat, .75 cupDijon Mustard, 2 TbspGarlic, 2 clove mincedZest and Juice of 2 small limesGround Cumin, 1 tspDried Thyme, .5 tspDried Oregano, .5 tspRed or Cayenne Pepper, .25 tspWhite Pepper, .25 tspScallions, raw, 3 large choppedRed Sweet Peppers, 2 diced Carrot. 1 large shreddedRed Ripe Tomatoes, 2 tomato dicedChicken Breast, cooked, 4 cups dicedCilantro, 1/4 cup (optional)Romaine Lettuce, 1-2 cups per serving (not incluced in nutruition info)Salsa for serving (optional)Tortilla Chips for serving or sprinkling over top (optional)
In a large bowl whisk together sour cream, dijon mustard, garlic, lime juice and zest, cumin, thyme, oregano, cayenne, and white pepper. Add scallions, sweet pepper, carrot, tomatoes, and chicken. Toss thoroughly to coat, and chill for at least 30 minutes.
Serve over a good size bed of shreded lettuce. Top with cilantro, salsa, and/or tortilla chips if desired.
Note: The recipe I was adapting called for a small red onion in addition but I left that out and liked it quite well. If you quite like onion certainly include it.
