500g Minced Beef 3 cloves garlic1tbsp parsley1tbsp oregano1tbsp basil1tsp salt1tsp pepper0.5 cup red peppers - sliced1 medium onion - chopped4 medium potatoes - quartered2tbsp olive oil
1. Set potatoes to par boil whilst preparing the following:
2. Heat the olive oil in a large saucepan
3. Add the garlic and herbs
4. Stir fry the onion and red pepper until al dente.
5. Add in mince and brown
6. Add in salt and pepper
7. Drain the potatoes and add to the main dish
8. Cook together for about 20 minutes, or until the potatoes are tender.
Serve!
This can also be served on top of rice (though the rice has not been added to the nutritional info)
