Root vegtable soup

Ingredients
500g Carrots, peeled and chopped1 large onion chopped1 Butternut peeled and chopped2 pints boiling waterBunch fresh corriander chopped
Directions
Dry fry the onion in a large saucepan.
Added seasoning and half the coriander and the chopped vegtables stir for 5 mins. Add boiling water and bring back to the boil.
Simmer for 15 mins.
Blend to preferred texture and add remaining coriander.
