Clean Mac 'n' Cheese

Ingredients
2 1/4 cups whole wheat elbow macaroniolive oil cooking spray1/4 cup brown rice flour1 cup skim milk85 grams low fat swiss cheese, shredded142 grams low fat cheddar, shredded1 tbsp panko breadcrumbs2 tbsp light parmesan cheese
Directions
Cook macaroni.
Preheat oven to 375 degrees.. Lightly spray a 8" casserole dish with non-stick spray.
Spoon flour into a bowl and whisk in enough milk to form a paste. Then add remaining milk, whisking as you do, making sure no lumps remain.
Place in a non-stick pan, over medium heat. When milk is warm add cheeses slowly bit by bit, stirring constantly. The mixture should thicken.
Stir in macaroni and transfer to the casserole dish. Top with breadcrumbs and parmesan.
Bake 15-20 minutes, or until topping is lightly browned.
Allow to stand 5 minutes before serving.

    I LOVE this recipe. My husband even asks for "clean" mac and cheese. I like to add veggies like peppers and cherry tomatoes; also (on a less clean day) I like to add fried onions on top. - 2/1/10
