1 onion (1 cup)3 cloves garlic1 lb ground turkey meat (white meat)1 lb fresh dark turkey1.5 c sweet potato1 tea. no salt1/2 tea. salt1 tea. black pepper2 egg whites3 T flaxseed meal1 tsp. olive oilpoultry seasoning about 1 tsp.one teas. each garlic and onion powder.
Mince the onion fine. Sauté the onion in the Olive oil. Put a side. Sauté the white meat turkey in the same pan to cook down the water and make it easy to mix with the other ingredients. Put aside with onion to cool. I bought 2 turkey legs and cut off the meat. Ground it with the large blade so that the sausage would have more textured. Mix up the eggs add the meats, onion, flaxseed and seasonings. Chop the sweet potato into small dice add to the other ingredients. Put in the fridge to meld flavors a few mins. Make into patty's. You could at this point cook a small portion to check the seasonings. Freeze. When saved for breakfast with cranberry sauce.
