Cottage Cheese Pancakes

Ingredients
Directions
1/2 cup fat free cottage cheese4 egg whites1/2 cup old fashioned oatstsp vanilla extract or maple flavoring (optional)
Put all ingredients in blender (put wet ingredients in 1st for easier mixing) Blend until combined into a batter. Heat non-stick skillet over medium heat. (Use a little non-stick cooking spray to help keep from sticking) Pour onto skillet in silverdollar sized pancakes & allow to cook until small bubbles form (about 4-5mins) then flip & allow to cook an additional 4-5 mins. Makes approx 6 pancakes. Serve with sugar free maple syrup.

Simple and awesome! Its not Saturday without pancakes and now I don't have to give them up! I've served these with ANY thing on top (fruit to honey to peanut butter). They remind me a little of the buckwheat pancakes Dad makes. It works much better using egg white from a carton than real eggs. - 10/18/08

Absolutely fantastic!!! I used a "Magic Bullet" and blended the egg whites, FF cottage cheese, and vanilla first. I don't like cottage cheese at all, so, I had to get the visual out of the way. Then, I added the oatmeal and blended 'til smooth. I didn't need to thin at all. Awesome! - 1/18/09

Great idea!! I made some modifications by adding baking powder,vanilla,half a spoon of splenda,half a spoon of lemon juice and 2big spoons of wheat germ to boost immunity. . And it was simply fluffy and delicious,needing just minimal toping (honey or mapple syrup). .Definitivly a yummy!! - 12/30/12

I used 1 cup of egg white substitute, and added 1tsp baking powder, plus a Tbs of flax seed for more fiber. Fresh bluberries are in season, so a sprinkled a few on each pancake. It yeilded 10 good sized pancakes that were super delicious! I'll used this recipe again and again! - 6/14/09

Can't wait to try this over the weekend...to get in another fruit serving I'm going to add strawberry compote (I make with artificial sweetener) to top it off. Sugar free maple syrup is one of my favorites, I use it with all sort of things. Thanks for the terrific and easy recipe - 6/12/09
