Low Fat Potato Soup

1 Onion, chopped2 Stalks celery, chopped2 (14 ounce) Cans chicken broth4 Potatoes, peeled and cubed1 Pinch dried parsley1 Tsp garlic powderSalt & Pepper to taste1 1/2 Cups fat free half and half1/2 Cup potato flakes
Spray a large pot with cooking spray and put over medium heat. Add the onion & celery and saute 10 minutes, or until tender. Add the broth and potatoes and stir well. Now stir in the parsley, garlic powder, and salt and pepper to taste.
Bring to a boil, reduce heat to low and simmer for 20 minutes. Add the half and half and continue to simmer for 10 minutes. Finally, stir in the potato flakes and allow to hear through.
Can be made in a crock pot for gatherings.
