Twice Baked Savory Sweet Potatoes

2 sweet potatoes1.5 cup black beans1/4 onion chopped2 cloves garlic2 cups arugula2 wedges laughing cow cheese2 tbsp salsa1 jalapeno (seeded if you like less spicy)
Makes 4 halves- 2 servings
preheat oven to 400 degrees
wash and puncture potatoes and bake for 40 minutes
spray nonstick skillet with no cal cooking spray
add onions and saute until soft
add jalapeno and garlic- cook for a few minutes
add beans and arugula, cook until arugula is wilted
when potatoes are done let cool and then halve
scoop out the inside with a spoon leaving a small layer around the edges to retain shape
take scooped out potato and place into food processor (or mash) with laughing cow cheese wedges and salsa
add to bean mixture
spoon mixture back into potatoes cover with cheese and return to over for 10 minutes
