Oat, Almond Butter, Dark Chocolate Chunk Bars

2 cups oats1/4 cup becel (olive oil spread)1 cup water1 cup nut butter2 eggs1/2 cup (120 grams) dark chocolate pieces (I used 71% cocoa bar, broken up into little pieces)1/2 cup whole wheat flour1 apple, peeled & grated1/2 - 3/4 tsp stevia powdered extract
Preheat oven to 325 degrees. Spray a 9x13" pan with non-stick spray.
Combine oats, eggs, water and becel. Stir in remaining ingredients. Spread batter into pan.
Bake for approximately 30 minutes.
Makes 20 bars.

I also ground some cinnamon over them before baking them. Oh, I just used peanut butter. They're not as sweet as I expected, but once you know what to expect, they're good. Next time I might cut the chocolate a little smaller so maybe it's in every bite. Wonder about melting the chocolate? - 8/24/09
