Crab Patties

Ingredients
2 Tbsp Onion - Chopped2 Tbsp Celery - Chopped1 Tsp Thyme3/4 Cup Breadcrumbs2 Eggs6 Tbsp Olive Oil2 Cups (1 pound) Imitation Crab (finely chopped - would suggest food processor)
Directions
1 - Saute Onion, Celery, and Thyme in 1 Tbsp Olive Oil.

2 - Combine Eggs, Breadcrumbs, Crab, Onion, Celery, and Thyme into a large bowl, and mix well.

3 - Preheat oven to 400.

4 - In a pan, add 2 Tbsp Olive Oil (you may need to add more during this step), and place patty made from step two into pan until each side is lightly browned (make sure to pack the patties as tight as you can so they do not fall apart).

5 - Place in oven for 10 minutes.

    Fantastic! I used canned crab meat and added some bell pepper. I didn't saute the onions, celery and bell pepper first. Just mixed it all together and baked a a little longer. Soooo good! - 7/23/13

    These were great. I made them exactly like the recipe except I used egg whites and I used Paprika instead of thyme (didn't have any). I`ve never made crab cakes before. Thanks for sharing. Looks like I'll be making lots of them - my boyfriend loved them :-) - 8/2/09

    If you use bran flakes cousely ground and use egg whites instead of eggs it wiil make the receipe healthier and also give you more fiber. - 6/13/09
