Seasoned Red Potatoes

2 lbs. Red Potatoes, washed, not peeled2 Tblsp. Olive Oil1 packet Hidden Valley Ranch Mix (dry)
Makes 4 servings.
Cube potatoes in 1/2-1 inch pieces.
Add to a large pot of boiling water and boil on med-high for 5 minutes.
In large plastic bowl (with lid), whisk packet of Hidden Valley Ranch dressing mix and Olive Oil.
Drain potatoes well and pour into plastic bowl with olive oil mix.
Place the lid tightly on the bowl and shake to coat potatoes.
Turn onto hot griddle or electric skillet (400 degrees) and pan fry, turning consistently but not constantly until done.
