cook yourself thin chocolate and cranberry biscotti

Ingredients
3/4 all purpose flour1/4 finely chopped almonds3 TBS of cocoa powder unsweetened3/4 tea baking powder1/4 tea salt1/4 c egg beaters1/3 c splenda2 tea vanilla extract1/2 almond extract1/3 c dried cranberries* melted chocolate for drizzling
Directions
preheat oven to 350 F
whisk together flour almonds cocoa powder baking powder and salt
beat egg and spleda in separate bowel and then vanilla and almond extract.
add the dry indregients slowly to the wet
fold in the dry cranberries
make into a log and place on a cooking baking sheet that is sprayed with PAM
cook for 25 min then take out and let cooking sheet cool for 15 mins. cut the log into 12 pieces and relay on sheet and cook for ten min and then flip and cook again for teh min until cookies are dried out.
let cool, drizzle with chocolate if want to

    I made these and like them, especially the taste of the cranberries in them. I only ended up with 9. The original recipe says it yields 1 1/2 doz! Definitely not. My mixture was not dry but firm and sticky. Think I'll add walnuts. You can't taste the chopped up almonds at all. - 3/14/13
