South Beach Dutch Apple Pancake

2 T margarine, melted, divided1 medium Granny Smith apple1/3 cup whole grain flour2 T sugar1/2 t ground cinnamon1/4 t ground nutmeg3/4 c skim milk4 eggs
Heat oven to 400.
Heat 1 T margarine in a large cast-iron skillet. Add peeled, cored, and sliced apple and cook until softened and lightly browned.
Puree remaining margarine, flour, sugar, cinnamon, nutmeg, milk, and eggs in a blender until just combined, about 1 minute. Pour batter into skillet, over apples. Bake until puffed and set, about 15 minutes. Serve hot.
