Chicken Enchiladas - "Italian Style"

2 cups cooked diced chicken breast1 (4 oz) can chopped green chilies1 tomato, seeded and diced1 cup fat free ricotta cheese4 scallions, chopped2 tbsp minced cilantrosalt & pepper (to taste)10 (8") low carb tortillas1 cup enchilada sauce1 cup shredded mozzarella cheese1/2 cup shredded cheddar cheese
In a bowl combine chicken, c hilies, tomato, ricotta, onions, cilantro and salt & pepper (to taste).
Place tortillas on a flat surface and spread filling down the center. Roll and place seam side down in a greased (with cooking spray) 91/2 x 13 baking dish. Spoon enchilada sauce over enchiladas and sprinkle with mozzarella then cheddar cheese. Cover with foil and bake in a 325 F oven for 20-25 min. Remove foil and bake for another 10 min. Make 10 large enchiladas.
