Sweet potato chili stew

Ingredients
2 large sweet potatoes, peeled and chopped1 15 oz can diced tomatoes1 red bell pepper, seeded and chopped1 can white beans (or you can use kidney beans or even black beans if you prefer)1 onion, chopped2 cloves of garlic, chopped1/2 tsp salt1 TBS chili powder1/2 tsp chipolte chili powder1 tsp smoked paprika1 1/2 cups water or you can use vegetable broth if you prefer
Directions
add water and canned tomatoes to a large pot. Add onion, sweet potatoes, garlic and red bell pepper, cook on med high until sweet potatoes are done to your liking. Drain beans and add to stew, cook through and add salt and spices.

    Very tasty! I found the serving to be too large, which suits me just fine--fewer calories to contend with. I served it over rice, with a side of zucchini. It would be good with the zucchini IN it, and probably didn't need the rice. - 3/12/12
