Apple Cinnamon Oatmeal Cottage Cheese Pancakes!

Ingredients
Directions
1/4 cup wheat flour1/4 oats1/4 cup low fat cottage cheese2T egg substitute1/2 apple chopped (keep the skin! its good for you!)cinnamon to taste
Mix dry incredients with the wet or use a food processor to blend ingredients for smoother texture. Stir in apples. Cook on medium heat until ready to flip. Flip over and finish until browned on both sides. Top with butter spray and SF syrup! Enjoy!

I intended to follow the recipe as written but it was way too thick before I was to add the apples, so I had to make changes. I decided to add 1 Tbs water to thin it a little and 1/2 a banana in place of the apple. Cooks differently than regular pancakes and are heavy but good. made 4-4" pancakes. - 1/6/11
