BJ's Squash Cassarole

Ingredients
4 cups zucchini squash4 cups yellow summer squash3 Tablespoons Smart Balance buttery spread3/4 Cup chopped onion1/2 cup Egg Beaters2 Tablespoons minced fresh parsley1 cup shredded reduced fat cheese1 teaspoon salt1/2 teaspoon white pepper2 cups diced low fat ham2 slices whole wheat bread processed into crumbs
Directions
Preheat oven to 350 degrees.

Spray a 9X13 inch baking pan with buttery spray.

Break up bread and grind it in a food processor until it is crumbs.

Cube squash and place squash and onions in large pot with a small amount of water. Bring to a simmer and cook until tender, 8-10 minutes, then drain in collander. Place squash in a large bowl and mash with a potato masher. Add buttery spread and stir until melted, then stir in the ham.

In a separate bowl combine the egg beaters, parsley, cheese and salt and pepper. Mix well and add to the squash and ham mixture.
Pour into the baking dish and bake for 20 minutes. Top with fresh bread crumbs and bake an additional 10 minutes, or until it is browned.
