blackbean pie

Ingredients
2 cans or 2 cups of dried black beans(soaked before use, makes 6 cups)1 green pepper1/2 large onion1-2 jalapenos2 cups frozen corn kernels1 can of light beer6 whole wheat tortillas (taco sized)6 cups shredded cheddar or colby jack cheese (divided equally, 1 cup per layer)cilantro or green oniontaco seasoning, chili powder, cumin, red pepper flakes or hot sauce (add as much as you like to taste depending on how spicy you like your food)
Directions
makes 2 9inch pies cut into 8 pieces each
preheat oven to 350 degrees
1.Dice peppers and onion and sautee them until translucent and soft
2. Combine black beans, sauteed mixture, beer and seasonings and cook until beans are done.
3. Add frozen corn and cook until corn is warm throughout add chopped cilantro or green onions.
4. Spray pie pan with nonstick spray, layer tortilla, bean mixture and cheese in the pan and repeat.
5. Cover second layer with a tortilla and then another cup of cheese on top.
6. Bake in over for about 30 minutes or until the cheese is bubbly and crispy.
-Remember that these steps should be done twice because the bean batch makes enough for 2 pies.
