Ingredients
1 cup Tony's Roux Mix2 cups water1 onion1 lb. chicken (deboned)1 large can tomato sauce1 can Rotel tomatoes1 can diced tomatoesGarlicTony's Creole seasoningparsleySalt
Directions
Mix Roux mix and water. Heat until has pudding consistency. Add tomato sauce, rotels, and diced tomato. Add water to thin to desired thickness. Season to taste. Add onion and chicken. Allow chicken to cook in gravy mixture. If not already cut up, remove cooked chicken and shred or cut. Serve over rice. Makes approximately 12 servings, depending on the amount of water used.
