Zuccihini Frittata with Cheese and Mushroom

Ingredients
6 large egg whites2 large eggs1/2 cup (2 ounces) shredded part-skim mozzarella cheese1/2 cup finely chopped green onions1/4 cup (1 ounce) grated fresh parmesan cheese1/4 cup chopped fresh basil1/4 teaspoon black pepper1/8 teaspoon salt1 teaspoon evoo1 1/2 cups thinly sliced zucchini1/2 cup chopped bell pepper (red & yellow) mixed1/2 cup chopped fresh mushrooms
Directions
1. Preheat oven to 475

2. Combine first 8 ingredients in a bowl; stir well with a whisk.

3. Heat oil in an ovenproof medium skillet over medium-high heat. Add zucchini, bell pepper and mushrooms; saute 5 minutes. Add egg mixture. Reduce heat to low; cook 5 minutes or until set around the edges. Remove pan from heat.

4. Bake at 475 for 8 minutes or until center is set. Cut into 4 wedges.

Yield: 4 servings (serving size: 1 wedge)
