Mashed Potatoes with Garlic & Rosemary

8 red potatoes, medium2 Tbps Smart Balance 50/50 Buttery Spread Plus Omega 31/2 c 2% milk 5 cloves garlic, minced1 sprig fresh rosemary, mincedsalt & pepper to taste
makes 8 1-cup servings
wash and cube potatoes (peeled if you prefer, I like to keep the skins).
place in large pot and fill with enough water to cover. add a pinch of salt.
cover and bring to boil on the stove.
once boiling, reduce heat to medium-low and let cook until a fork goes through easily.
drain potatoes and let cool slightly.
return to pot and mash.
gradually mix in butter and milk until desired level of creaminess is reached.
mix in garlic & rosemary + salt & pepper to taste.
serve warm.
